Erna's Sunday Spaghetti Sauce

The recipe and the story of Erna's Sunday Spaghetti Sauce goes back generations. My mother Ernestine Tramonte grew up in a family of ten children and they were all great cooks. She admitted to me that she wasn't the best cook but she had been trained by the best, her older sisters. Because she was the youngest she got the kitchen duty for every meal. Her father had to have some fresh pasta dish every day.

When I was a young boy, my three brothers and I had bedrooms directly over our mother's kitchen. Every Sunday we would wake to the amazing smells of oregano, sweet basil, garlic, onions, Italian seasonings and other secret ingredients that our mother, Erna short for Ernestine was preparing our spaghetti lunch. She only fixed spaghetti on Sunday because that was a special day and it took a long time to create her famous secret sauce. The entire family actually sat down and had a meal together. I have been trying to replicate Erna's recipe since she passed away.

This product had been slowly cooked and is ready to serve as soon as it is heated. My suggestion is to let it simmer as long as you can stand it. If it is a little tart for you add a little sugar to cut the acidity.

We use Erna's sauce on meatball sandwiches, pizza, noodles of any type, over Italian Sausage and everything you can imagine. The highest compliment for a cook is to have people eating the sauce before it makes it to your plate or table. At our house we have a loaf of garlic bread or just French bread on the top of the stove next to the pot of Erna's sauce and you guessed it, we just dip it in the sauce and eat it. We call it suca and bread. Scoop up a bowl of Erna's sauce and sprinkle some Parmesan cheese on it and dip the bread until the bowl is empty. You will need plenty of bread for dipping.

Most families don't have time to cook a hot meal any more. This is a quick solution for any occasion. If you tell your friends and family that you cooked the spaghetti sauce we are sure that Erna would approve.
